Ingredients

  • 300g fettuccine
  • 2 chicken breasts, diced
  • 2 tbsp olive oil
  • 3 cloves garlic, crushed
  • 250g mushrooms, sliced
  • 300ml thickened cream
  • ½ cup grated parmesan
  • 2 handfuls baby spinach
  • Salt and cracked black pepper
  • Fresh parsley, chopped (optional)

Method

Zone 1 - Cook the Pasta

  1. Bring a large saucepan of salted water to the boil.
  2. Add the fettuccine and cook according to the packet instructions until al dente.
  3. During cooking, reserve ½ cup of the pasta cooking water.

Zone 2 - Prepare the Sauce

  1. While the pasta cooks, heat the olive oil in a large frypan.
  2. Add the diced chicken and cook for 5-6 minutes until golden.

  2. Toss everything together, adding a splash of the reserved pasta water if needed to loosen the sauce.
  3. Season with salt and pepper.
  4. Finish with chopped parsley and extra parmesan.
