Ingredients
- 300g fettuccine
- 2 chicken breasts, diced
- 2 tbsp olive oil
- 3 cloves garlic, crushed
- 250g mushrooms, sliced
- 300ml thickened cream
- ½ cup grated parmesan
- 2 handfuls baby spinach
- Salt and cracked black pepper
- Fresh parsley, chopped (optional)

Method
Zone 1 - Cook the Pasta
- Bring a large saucepan of salted water to the boil.
- Add the fettuccine and cook according to the packet instructions until al dente.
- During cooking, reserve ½ cup of the pasta cooking water.
Zone 2 - Prepare the Sauce
- While the pasta cooks, heat the olive oil in a large frypan.
- Add the diced chicken and cook for 5-6 minutes until golden.
