-
2 eggs, lightly beaten
-
½ cup grated parmesan cheese

1 tsp garlic powder

1 tsp smoked paprika
-
Salt and pepper

Olive oil spray
For the garlic parmesan potatoes:
-
600g baby potatoes, halved or quartered

2 tbsp olive oil

2 cloves garlic, crushed
-
¼ cup grated parmesan
-
1 tsp dried Italian herbs
-
Salt and pepper
To serve:
-
Lemon wedges
-
Fresh parsley
-
Your favourite salad or coleslaw
Method
Step 1: Prepare the potatoes
Preheat your air fryer oven to 200°C on the air fry setting. Toss the potatoes in olive oil, crushed garlic, Italian herbs, salt and pepper. Spread them across a baking tray in a single layer and cook for approximately 20 minutes, turning halfway through.
Step 2: Crumb the chicken
While the potatoes are cooking, slice each chicken breast horizontally and gently flatten to an even thickness of around 1.5cm. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with parmesan, garlic powder, paprika, salt and pepper.
Coat each piece of chicken in flour, dip into the egg, then press firmly into the breadcrumb mixture until evenly covered.
Step 3: Air fry until golden
Lightly spray both sides of the crumbed chicken with olive oil. Place in the air fryer basket, leaving space between each piece for the hot air to circulate.
Cook at 200°C for approximately 12–16 minutes, turning halfway through, until the coating is golden and crispy and the chicken reaches an internal temperature of 75°C. Cook in batches if necessary.
Step 4: Finish the potatoes
Once the potatoes are tender and golden, sprinkle over the remaining parmesan and return to the oven for another 2–3 minutes until the cheese is lightly browned.
Step 5: Serve and enjoy
Plate up the schnitzels alongside a generous helping of garlic parmesan potatoes. Add a squeeze of fresh lemon, a sprinkle of parsley and a simple green salad or coleslaw.
Dinner is served!
Note: Cooking times are approximate and will vary depending on the thickness of the chicken, tray placement and oven performance.
