KickAss Campfire Reuben Toastie

Whip up this toastie on the KickAss Jaffle Maker on your next getaway, and you’ll be the most popular cook in the campsite!  

Ingredients (Makes 2 toasties)

• 4 slices of rye bread (or sourdough for a crunchier bite)
• Butter, for spreading
• 4 slices of Swiss cheese
• 4 slices of corned beef or pastrami
• ½ cup sauerkraut, drained well
• 2 tbsp Russian dressing (recipe below)

For the Russian Dressing:

• 2 tbsp mayonnaise
• 1 tbsp ketchup
• 1 tsp horseradish (optional, but adds a nice kick!)
• ½ tsp Worcestershire sauce
• ¼ tsp smoked paprika
• Salt & pepper to taste

Method

• Preheat your KickAss Jaffle Maker for 5 minutes.
• Butter one side of each slice of bread. This will be the outer side that crisps up in the jaffle maker.
• Spread Russian dressing on the unbuttered side of two slices.
• Layer Swiss cheese, corned beef, and sauerkraut, then add another slice of cheese on top (extra melty goodness!).
• Place the second slice of bread on top, butter-side facing out.
• Place in the jaffle maker, close the lid, and cook for 5-7 minutes, or until golden brown and crispy.
• Carefully remove, let it cool for a minute (because molten cheese = lava!), then slice and enjoy!
