BBQ Garlic and Herb Chicken Wraps - Makes 4

This quick & easy recipe is perfect to whip up while camping.

Ingredients

For the Chicken:

  • 4 chicken breasts or thighs (boneless, skinless)
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Juice of 1 lemon

For the Wraps:

  • 4 large tortillas or flatbreads
  • 1 cup mixed greens (spinach, rocket, or lettuce)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber slices
  • 1/2 cup grated cheese (optional)
  • 1/4 cup Greek yoghurt or sour cream
  • 1/4 cup hummus or your favourite sauce

Method:

1. Marinate the Chicken

  • In a bowl, combine olive oil, minced garlic, smoked paprika, oregano, thyme, lemon juice, salt, and pepper.
  • Add the chicken and coat thoroughly. Let it marinate for at least 15 minutes (or up to 2 hours in an esky if time allows).

2. Preheat the Electric BBQ

  • Plug in your KickAss QuickFire BBQ, set it to 200°C.

3. Cook the Chicken

  • Place the marinated chicken on the BBQ grill and cook for 5-7 minutes per side, or until the chicken is cooked through.
  • Remove from the grill and let the chicken rest for 5 minutes before slicing into thin strips.

4. Assemble the Wraps

  • Spread a layer of hummus or yoghurt on each tortilla.
  • Add a handful of mixed greens, sliced chicken, cherry tomatoes, cucumber slices, and a sprinkle of cheese (if using).
  • Fold the tortilla into a wrap or roll it burrito-style for easy handling.

5. Serve and Enjoy!
