Campfire-Style Roast Veggie and Feta Bake

Travel ovens make it a breeze to cook up delicious meals on the road. Whether you have your oven installed in your caravan or RV, or simply hooked up in the back of your 4WD, a warm home-cooked meal is never far away.

This easy and delicious roast veggie and feta bake is perfect for dinner after a long day of exploring and pairs wonderfully with grilled meat or as a standalone vegetarian dish. Cook it up in any of our KickAss Travel Ovens.

Ingredients:

  • 2 medium zucchinis, sliced into rounds
  • 1 red capsicum, diced
  • 1 yellow capsicum, diced
  • 1 medium sweet potato, peeled and cubed
  • 1 red onion, sliced into wedges
  • 200g cherry tomatoes, halved
  • 100g feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Optional: Fresh basil leaves for garnish

Method:

1. Preheat the Oven
Plug in your KickAss travel oven, set the temperature to 180°C (or the highest available), and allow it to preheat while you prepare the ingredients.

2. Prepare the Vegetables
In a large mixing bowl, combine the zucchini, capsicums, sweet potato, red onion, and cherry tomatoes. Drizzle with olive oil, sprinkle with oregano, smoked paprika, salt, and pepper, and toss to coat the veggies evenly.

3. Assemble the Dish
Line the travel oven’s baking tray with baking paper or lightly grease it with olive oil. Spread the seasoned veggies evenly across the tray.

4. Bake the Veggies
Place the tray into the preheated oven and bake for 35-45 minutes, or until the veggies are tender and slightly caramelised. Stir halfway through for even cooking.

5. Add the Feta
Remove the tray from the oven, sprinkle the crumbled feta over the top of the veggies, and return it to the oven for an additional 5 minutes, just enough to warm the feta and let it soften slightly.

6. Serve and Enjoy
Once cooked, remove the tray from the oven and let it cool slightly. Garnish with fresh basil leaves if desired, and serve as a main or side dish.

Pro Tips:

  • For added protein, toss in some pre-cooked chickpeas or cubed chicken before baking.
  • If you have access to fresh herbs like rosemary or thyme, add them to the veggie mix for extra flavour.
