Ingredients:

  • 2 tablespoons olive oil

  • 2 garlic cloves, minced

  • 1 small onion, diced

  • 2 chicken thighs or breasts, diced

  • 1 zucchini, chopped

  • 1 red capsicum, chopped

  • 1 cup cherry tomatoes, halved

  • 2 cups penne or spiral pasta

  • 2 cups chicken stock

  • ½ cup thickened cream or evaporated milk

  • ½ cup grated parmesan cheese

  • Salt & pepper to taste

  • Optional: fresh basil or parsley for garnish

Instructions:

  1. Sauté Aromatics: Place a large induction-compatible pot or deep pan on the cooktop. Set to the “Fry” mode. Heat olive oil, then sauté garlic and onion until translucent. 

  2. Cook Chicken: Add diced chicken to the pan. Cook until browned and cooked through.

  3. Add Vegetables: Stir in zucchini, capsicum, and cherry tomatoes. Cook for 3 to 4 minutes until slightly softened.

  4. Simmer Pasta: Add pasta and chicken stock to the pan. Bring to a boil, then reduce heat. Cover and simmer for 10 to 12 minutes, stirring occasionally, until pasta is al dente.

  5. Finish Sauce: Stir in cream and parmesan cheese. Cook for an additional 2–3 minutes until the sauce thickens. Season with salt and pepper to taste.
